I feel like a really good wife right now. My husband was mentioning that he gets hungry mid afternoon and was looking for something healthy to snack on that will actually fill him up. So I made these! Really easy (as always) and delicious (obviously!).
6 cups Quaker oats
250g dried apricots, check and chopped
200g almonds, chopped
150g pumpkin seeds
75g sunflower seeds
1 cup dark soft brown sugar
4 cups soya milk (or semi skimmed if you want them dairy)
1 tsp nutmeg
3 tbsp cinnamon
3 tsp vanilla essence
Preheat the oven to 200 degrees.
Mix all of the dry ingredients together. Mix all the wet ingredients together in a separate bowl. Then mix everything together. Pour the mixture into lined baking containers and bake for 25 minutes or until slightly brown on the top. Enjoy with a cup of tea or a glass of milk!
This looks really impressive, but is deceptively easy to make!

1 Osem marble cake
5 tbsp orange juice
1 packet sugar free jelly
1 can of dairy free whip (with a nozzle)
Crumble the cake into a bowl and pour the orange juice over it. Mix together until the mixture is all moist. Press an equal amount of cake mixture into the bottom of your serving cup. Chop up the apple into small pieces and place on top of the cake. Prepare the jelly and quickly and carefully (using an ice cream scoop) spoon one scoop of jelly onto the apples. When set, use your whip with a nozzle to decorate the top with dairy free cream. Enjoy the compliments!
