I don't mean to brag, but these are just D I V I N E !!! I am seriously proud of these...
1 cup of quinoa
2 cups water
Dash of olive oil
6 large florets of broccoli
1 large yellow pepper
Handful of grated pizza cheese.
3/4 cup breadcrumbs
salt, onion powder & paprika to taste
Olive oil spray
Rinse and drain 1 cup of quinoa thoroughly. Use the water to boil the quinoa up and then simmer (covered) until the water is absorbed.
Finely chop the broccoli and pepper. When the quinoa is cool, mix in the veggies and the cheese. Add the eggs and breadcrumbs (more if needed to bind) and the salt, onion powder and paprika. Mix thoroughly. Spray a baking tin with oil and use wet hands to mould the mixture into burgers. Bake on high for 15-20 minutes and then flip them gently and bake for another 10 minutes. Enjoy!!
